Spicy Shrimp Gumbo with Brown Rice
I love spicy, southern gumbo, but it isn’t typically healthy and it is never pesco-vegetarian approved. This version is meat-free and full of nutrition! Spicy, warm, and comforting it could likely cure a cold and it is a delicious way to warm up this winter! It is also pretty easy to make. For a vegan (and less expensive) version, skip the shrimp and use vegetable broth.

Spicy Thai Curry with Quinoa
If you haven’t tried quinoa yet, you should. It’s an odd grain, with its little tail and strange texture. According to the all-knowing Wikipedia it is closely related to tumbleweeds. That is proof that it’s weird. I love it- you will, too. Unlike our former friend white rice, quinoa is very nutrient dense. It is a surprisingly great source of protein and one of the very few vegan sources of complete protein. It is also a good source of fiber, iron, and magnesium.

Mercury Awareness: Smarter, Safer Fish for your Family
I have heard some horror stories about mercury poisoning. Long-term exposure to mercury can cause shaking, headaches, trouble sleeping, memory loss, skin rash, sores, swollen gums, and loss of intelligence. Scary, right? Fish is loaded with omega-3 fatty acids, so instead of skipping fish altogether, let’s make some smart compromises.
