Open-Faced Breakfast Sandwich (Gluten-Free!)

This is not a standard breakfast sandwich. I am not about to reveal a disappointing recipe where I cleverly replace regular bread with gluten-free bread. Anyone could do that. I got creative with this sandwich and replaced that crap with a potato latke! This is a messy, knife-and-fork sandwich. It’s not light, but it is a really great way to start the day. I firmly believe that breakfast should be the biggest meal of the day. I always start my day with a big meal and end my day on a much lighter note.

Vindication

Remember this post I wrote about Nutella’s misleading advertisements? Well, I wasn’t the only one to notice. Here is an article from CBS News about a California mom who won $3.05 million when she sued them for false advertising! Nutella is a great example of the importance of reading labels! Sure, it is delicious and it certainly isn’t the worst thing you could eat, but it is not healthy. Perhaps in the future, Nutella will face the facts and market their product as junk food, like they should have been doing all along.

Spicy Snack Mix

This spicy, oriental snack mix was inspired by a snack mix that my grandmother notoriously made at every single holiday party for 20+ years. However, my grandmother’s version was far from gluten-free. This is not the healthiest recipe on my site, but it is really delicious. I love to keep this mix in my back pack!

Summery (Gluten-Free) Feta and Squash Pesto Pizza

I thought that going gluten-free would mean no pizza, but Udi’s Gluten-Free Crusts are amazing. The delicious, mini crusts are thin and crispy, while maintaining a soft, chewy texture. The flavor was amazing and the ingredient list was just as impressive. I bought some “homemade” pesto from Terra Cotta Pasta Company at a farmer’s market a while back and I whipped together this amazing, summery pizza!
